Ingredients
  

  • 350 gr milk chocolate callets or bars
  • 60 gr kataifi dough chopped
  • 95 gr pistachio butter
  • 60 gr unsalted butter
  • 2 gr salt
  • 50 gr tahini

Method
 

  1. Melt the chocolate in a water bath, stirring occasionally, and remove the bowl from the pan. I love using the water bath method due to the large amount of chocolate, but you can use a microwave; just check the chocolate every 15 seconds to prevent burning. Also, you can divide the chocolate into 2 parts or reheat it.
  2. A measuring cup is the best tool for pouring chocolate into molds.
  3. After the chocolate has cooled to 86°F, pour it into the molds. This is the perfect temperature for working with chocolate. You can tap the silicone mold on the table several times to evenly pour the chocolate. Put in the freezer for 15 minutes.
  4. Melt the butter in a frying pan.
  5. Add chopped kataifi dough. Stir constantly to prevent burning. It takes 2 minutes on low heat.
  6. This is the light brown color that should come out. Turn off the heat.
  7. Add paste, tahini, and salt to get a perfect taste.
  8. Mix thoroughly.
  9. Fill the dough into the mold evenly using a spoon. Try not to touch the edges to make space for chocolate.
  10. Repeat the chocolate process to cover the dough.
  11. Use a spatula for smoothing the chocolate. If desired, wipe remaining chocolate around the edges of each piece. Put in the fridge for 3 hours until the chocolate is completely set.
  12. Carefully remove the chocolate from the silicone mold and cut it into bars to serve.

2. I recommend buying chocolate from these companies: Lindt and Calebaut.
3. This amount of ingredients is perfect for this size of mold: 7×10 in.
4. You can make this recipe in advance and keep it in the fridge until you are ready to serve.
 5.  Store chocolate bars in the fridge in an airtight container; they will last for up to 5-7 days.
 6. This recipe gives you 12 small chocolate bars.
 
 
 

Tips💡

  1. Do not put chocolate bars in the freezer, this will cause them to crack when removed from the molds.
